This take on my shortbread cookie can be made in Oatmeal Raisin or Oatmeal Chocolate Chip, it uses oat flour and is completely free of gluten! It's still soft and buttery with a hint of sea salt.

MILLIONAIRE'S SHORTBREAD

This UK classic is something I spent years trying to perfect since my visit there in 2019. The long shape of it was inspired by a tiny outdoor cafe I went to in the middle of The Lake District. If you don't know, Millionaire's Shortbread is consisted of three layers. Soft buttery shortbread, smooth caramel, and rich chocolate ganache, topped with flakes of sea salt. It's as decadent as it looks.
